Originally from Atlanta, Georgia, Troy first got involved in the restaurant industry in 1999 as a college job while at UNC-Asheville. In 2002, he moved to Chapel Hill to chase a different passion, Ultimate Frisbee. He has played for nationally acclaimed Raleigh club teams and twice won gold medals at World Championships with Team USA in 2011 and 2016. More recently, Troy has worked with the Raleigh Flyers, an AUDL team that began play in 2015, and there met bu•ku co-owner Sean Degnan, who is a partner in the team. While competing in Ultimate, he continued working in the restaurant industry where he discovered a new passion – the world of wine. In 2010 he started working at Bin 54 Steak & Cellar in Chapel Hill. It was here that his interest for wine turned into a true passion and a career. After taking several trips to Oregon and Napa Valley to tour wine country, he decided to pursue his Sommelier Certification. He studied for and received his Court of Master Sommeliers Certification Level 1 in 2012 and then his Level 2 in 2013. These certifications enabled him to continue his pursuits, taking over the wine program at Bin 54 in 2012. He has continued to enjoy traveling for wine to Walla Walla, Paso Robles, London, South Africa, Santa Barbara, North Carolina’s Yadkin Valley, Willamette Valley again, and further Sonoma/Napa visits. He has taken the CMS Level 3 course and exam, which he continues to study for, and also plans on pursuing his WSET Level 3 certification this year. Most recently he has joined the bu•ku family as the Wine Director, where he passes on his vast wine knowledge to our guests and staff on a daily basis. Troy and his wife Sarah (and dog Remy) married this past November and are relocating to Raleigh from Chapel Hill.
